To Make Vindaloo
- Cube the Meat or chop Vegetables then finely chop the Onion.
- Heat the Oil in a Large Pan or Wok then add the Onion and fry on a medium heat until soft and Golden. (approx 10 mins).
- Add the sachet of Spices and fry gently for 2 mins.
- Add the Tomato Puree and fry for 1 min.
- Add the Meat or Veg and 100 ml of Water and the Juice of 1 Lime along with the 400g tin of chopped Tomatoes. (mash them first to create a smoother sauce).
- Continue frying for 20 mins on a medium heat until the meat is fully cooked, the Water has evaporated and the sauce has thickened.
